This delicious recipe, which transforms the humble taco into a healthier alternative, was developed by Anita Cronin for Branyan Road State School‘s Come and Try Day opportunities.
The program, which was run throughout the school year, focused on creating fun food opportunities, with plenty of fruit and veggies included, to increase student consumption.
Lettuce cup taco wrap ingredients
Taco mince:
- 500g beef mince
- 1 brown onion, finely chopped
- 1 tbsp olive oil
- 1 packet taco seasoning mix
- 250 corn kernels
- 400g tin of black beans, rinsed and drained well
- 400g tin diced tomatoes
- 1/4 cup of water
Wrap:
- Lettuce cups
- Salad ingredients of choice
Method
- Heat a large pan over medium heat.
- Add olive oil and onion and cook until translucent.
- Add mince, cook until brown (if necessary you may need to drain excess water from mince during cooking).
- Add corn, black beans, diced tomatoes, seasoning mix and 1/4 cup of water if necessary.
- Cook for 15 minutes, until cooked through.
- Serve in lettuce cups with salad ingredients of your choice.
