Ingredients:
4 eggs
3/4 cup of sugar
1/2 cup of lemon juice
125g of butter
2 teaspoons of finely grated lemon rind (optional)
Method:
Put eggs and sugar in a bowl and place over a simmering pot.
Whisk constantly until sugar is dissolved.
Add lemon juice, rind and butter.
Whisk for 20 minutes until smooth and coats spoon.
Do not allow to boil.
