Chef Karen Harvey has created this delicious alternative of bircher muesli for the children at YBundy Childcare.
Karen altered the ingredients, changing to vanilla yoghurt and the fruit from berries to apples.
She then decided to call it unicorn muesli which has been a hit with the kids ever since!
You can follow the recipe below or change up the fruit to create lots of different varieties of muesli to enjoy.
- 2 cups of oats
- 2 tablespoons of honey
- 2 tablespoons maple syrup
- 300 grams vanilla yoghurt
- 300 mls milk
- 2 grated apples (or apple chunks)
- Mix all together, leave overnight, serve and enjoy!
